Campden Tablets: Sodium Metabisulfite (SMS) prevents wild yeast, bacteria growth, and oxidation in your wine. Sodium Metabisulfite also works well as a sanitizer for your wine making equipment. The convenient tablet form takes the guesswork out of measuring. Each tablet adds 75 ppm free SO2 per gallon (pH dependent). Grind the tablet into a powder and dissolve in water before using.

I crush up a tablet and mix it into my brewing water as I am heating it. By the time its at mash temperature, its's dissolved and the Chlormine is gone. My beer has a cleaner less phenolic taste now.

Our local water has Chlorine and the beer doesn't taste as good as it should. I crack a pill in half and add it while heating my water and it drives off the Chlorine making the beer taste better.

I use the Campden tablets to treat my water, so its usable for brewing. Half a tablet is what I use for 7 gallons of water.

My city treats its water with Chloramine and that causes the beer to taste medicinal. By adding a pill to the water at the start of the brew day I can remove the Chloramine and make better tasting beer.

I stopped using sulfides a couple of years ago. Some wine recipies go crazy with them using them at every stage. I "read" they can cause ED problems. I would rather boil than go through that mess.

I use it with Potassium Sorbate. I dissolve 1 crushed tablet per gallon of wine. Then I can bottle without fear of bottle bombs.
