Campden Tablets: Sodium Metabisulfite (SMS) prevents wild yeast, bacteria growth, and oxidation in your wine. Sodium Metabisulfite also works well as a sanitizer for your wine making equipment. The convenient tablet form takes the guesswork out of measuring. Each tablet adds 75 ppm free SO2 per gallon (pH dependent). Grind the tablet into a powder and dissolve in water before using.

Easy to crush/mix into your must. Works perfectly to neutralize all wild growth and buying bulk will make sure you never run out.

And of course you need Potassium Sorbate. with these two, you will be able to suspend that yeast so you can back sweeten and not have to worry about it carbing up while it is conditioning. I've never had one problem when this item is combined with Potassium Sorbate.

These are great to have around. Buy extra! Great for cleaning or sterilizing unpasteurized cider.

There's not too much to say about these guys. They get the job done and kill the yeast. Even 50 is a big enough pack that will last you a long time unless you are brewing daily. No trouble in using these at all.

I crush 1 tablet per gallon of wine and dissolve it in my wine. Stops fermentation so I can bottle safely.

These little guys are well worth the price. Even if they don't contribute a whole lot you can be sure that the water quality you are starting with is where you want it to be!

I use it with Potassium Sorbate. I dissolve 1 crushed tablet per gallon of wine. Then I can bottle without fear of bottle bombs.
