Brettanomyces/Lactic Cultures
Brettanomyces, Lactobacillus, and Pediococcus are the organisms responsible for the world famous Lambic and Gueuze styles of wild fermented beers from Belgium. Unique and funky flavors are a hallmark of these critters. Lactobacillus is also the culture responsible for the refreshing and tart German style, Berliner Weisse.
