The Export is the highest gravity allowed under the Scottish ale designation (anything higher and its a Scotch ale) with the antiquated reference /- designated how many schillings a barrel was taxed. The Export was an 80/- (schilling) beer. The Export has a tawny brown color with a light biscuit flavor, low hop profile and due to a lower fermenting temp, a creamy mouthfeel with just a touch of peat. Ferments best at the low end of the ale spectrum (60-65F). Our ingredients for this recipe include: 6 lbs. Gold liquid malt extract, 1 lb. Amber DME, 4 oz. Biscuit, 8 oz. Caramel 40L, 4 oz. Chocolate, 2 oz. Special B, 1 oz. Peat malt specialty grains, .5 oz. Challenger, 1 oz. Fuggles, priming sugar, muslin bag, and yeast.
