I like this best as a one gallon batch, at one gallon the acidity is exactly what the acidity in the wine kits are about .34, with my little test kit...with yeast 212,my one batch tasted just like wine experts and it works good several of the other yeasts, it fun to mix some with the cabernet

it's decent wine but for a 2.5 gallon recipe the wine comes out a really light red, not the dark merlot color it should be. I added 2 cups of grape extract to my 2.5 gallon batch to correct the color problem. If you are making 5 or 6 gallons you really need 3 cans.

I bought this product last year and was not impressed by the INITIAL bottled wine I made. HOWEVER, one year later (like NOW), after aging, this wine is much MUCH better. I am not a patient person, but in this case, it was worth the wait. I also added some other grape concentrate to correct the color because like others said, it was too clear for traditional merlot which should be like a dark red garnet, but the flavor is what totally blew me away, between the time it was bottled, and a year later. wow.

This juice produces a fine Merlot if it's fermented and bottled with care. My suggestion is to ferment it with oak chips.

I've made a Merlot in the past with this was happy with it. This time I added medium toasted french oak cubes. It made a nice , dry, oaky, flavorful Merlot. Both times I aged it 12 months, which is needed to get the best taste.
