This kit is awsome. I have made it twice and am planning to make it regularly. The liquid yeast makes this beer. I have not tried the dry yeast with it but the smack pack was so tasty! This is a great example of a belgian beer that can have some maltyness but also showcase great yeast character. It was decent when green, very drinkable with the fresh taste, but also did change after a couple months. How can you go wrong with a beer made by monks?

This was the kit I made as my first foray into home brewing. I was impatient and drank it a good amount of this before it was ready. It was good, but the bottles I let sit for a few months were way better.

I made this beer two time, and both were VERY good. I kegged it and it was gone WAY before it should have been. As I was nearing the end it just kept getting better and better. It was one of the best beers I ever made, and would stack it up against a lot commercial offerings.

Next time it will be bottled and aged as it should be!! IF you like a trappist ale, you will not be dissappointed.

I've never brewed a Belgian before -- I thought I'd try this kit to get started.
I was a big hit with friends, even though I kegged it instead of bottling it. It was wonderful. It does need to age for a few weeks to mellow into that Belgian style.

If you like Trappist beer this recipe will not disappoint. Tastes to me like a Westmalle Trippel, but I took a few small liberties with the recipe. Definitely use the Wyeast (if your going to spend the money for the kit don't screw yourself by skimping out on one of the most important components). This beer was my first ever attempt at brewing beer and the turnout tastes like I'm a seasoned pro! I think I'll make this again next year.

Made this brew a couple months ago with a Chimay Ale (Brown) yeast starter. Had some issues with the yeast (it was a very light yeast, and too much of it ended up in the final product) but the final result was outstanding. Very similar to the Chimay from which I cultured the yeast from. Just brewed my second batch yesterday. Can hardly wait! You really need to let this condition for a month or two before consuming. I started to consume within a couple weeks, and as it sat, it just got better and better.

Wow, this came out ridiculously great. This was my second batch, I gave it two weeks in primary, two weeks in secondary and four weeks in the bottle so far. At this point it is incredibly good. I will probably wait a couple weeks before I really start drinking them because I think it will just get better as I age it. I used the Wyeast activator and did not use a starter. It worked fine because I actually had krausen shoot through the airlock on this one.

I've now made this kit twice, and will keep on making it. The last time I made it I added 2 oz. of powdered dark chocolate during the boil, and an extra ~0.75lbs of dark Belgian candi sugar (boiled in 1/2 cup of water obviously) to the secondary fermenter, and could not be more pleased with the results. With these two small modifications it tastes very similar to Chimay Red, but much better... I highly recommend making the recipe once then doing these modifications for comparison, you wont regret it. Everyone who has tried it begs me for some to take home.

I took my time with this kit and the results were awesome.
I did 3 - 10 day fermentations.
Naturally carbed in a keg. I purge the keg with CO2 and set at 2 psi.
Carb at room temp 2 weeks. Refrigerate 1 week and tap.
Nice clear, golden color and very mellow taste.
I will be ordering another kit soon.
