Substituted the pale choc in a recipe i brewed recently. (Chimay clone..) I was really pleased with the color and flavor imparted from the pale chocolate. It wasn't as strong and forward as a regular choc and really let the "yeastiness" of the belgian style shine. I'll definitely be experimenting more with the pale choc in the near future!!

Jamil Zanesheff recommends pale chocolate in a lot of his recipes, which led me to try it. I think it has a nice roasty chocolate flavor that doesn't contribute much bitterness. It's more like a milk chocolate or molasses flavor and less burnt coffee. I think this would be good in beers like Dubbels, Old Ales, Brown Ales, Robust porters where you'd want color and chocolate flavor, but not the harsh astrigent roast.
