Our blend of lambic cultures produce beer with a complex, earthy profile and a distinctive pie cherry sourness. Aging up to 18 months is required for a full flavor profile and acidity to develop. Specific proportions of a Belgian style ale strain, a sherry strain, two Brettanomyces strains, a Lactobacillus culture, and a Pediococcus culture produce the desirable flavor components of these beers as they are brewed in West Flanders. Propagation of this culture is not recommended and will result in a change of the proportions of the individual components. This blend will produce a very dry beer due to the super-attenuative nature of the mixed cultures.

Oddly, there are no reviews for this, probably a new listing for an old product where the reviews didn't get imported over.

This is an absolutely great product. This is a cultured, lab created version of the microflora used to produce Rodenbach's classic sour red ales. This single packet contains all the yeast you need to make a great Flanders Red. You don't (and shouldn't) make a starter, just pitch this right in. I know some people do a primary ferment with "clean" ale yeast first, but if you want a bitingly sour beer in less than a year of aging, you should skip this step.

Some people also use this mixture to make a lambic, which I think is probably ok too, but I've never used the Roeselare blend for this purpose, but I don't think that there's any reason to think this wouldn't work, but there is a Wyeast Lambic blend that should be better.
