Chile’s star grape, the king of all reds - Cabernet Sauvignon, was introduced into Chile by French wine interests in the mid-19th century. Cabernet Sauvignon, the most widely planted red grape in Chile, successfully flourishes in the vineyards of both Central and Alto Maipo. This late-ripening grape flourishes throughout vineyards in the Maipo region where the hot, dry climate allows it to ripen thoroughly and develop rich red fruit, berry, black currant, fig aromas and flavors. Tannins, a natural part of grape skins, seeds, and stems—make Chilean Cabernet Sauvignon a firm-bodied, substantial wine.

Food and Wine Pairing: Cabernet pairs well with BBQ meats, Lamb, and Roast Beef.

Malbec is one of the traditional Bordeaux varieties, having a distinctive taste that is similar to Cabernet Sauvignon and Merlot. The difference between Malbec and Merlot is that Malbec has a more distinctive, full bodied flavor, while having a darker, more inky tone than Cabernet Sauvignon. Malbec wine has a fruity plum favor and it is typically a medium to full-bodied red wine. It is described as being earthy with a wood-like aroma.

Food and Wine Pairing: Malbec goes best with red meats such as roast beef, steak and prime rib. It also goes well with roast turkey and chicken.

Carmenere has rapidly become Chile’s own signature grape. The deepest and darkest of all red grapes, Carmenere is a Bordeaux type grape varietal originally introduced into Chile during the mid-19thcentury, and until recent times, mistaken for a Merlot clone. For those unfamiliar with Carmenere, it has often been described as a cross between Merlot and Cabernet Franc – soft gentle tannins found in Merlot, combined with the strong herbal tendencies found in Cab Franc.

Carmenere thrives in Chile’s long hot growing season. Rich in blackberries and black pepper characteristics, Carmenere is mellow and smooth, possessing well-rounded tannins, making this a very soft and easy to drink grape varietal.

Food and Wine Pairing: Enjoyed best with BBQ Meats, Lamb, Roast Beef, and Spicy Pork. .

A relatively new addition to the Chilean line-up, Pinot Noir has arrived just in time to satisfy the ever growing number of Pinot fans in North America. A medium colored red, Pinot Noir is lighter in color than Cabernet and Merlot. Bursting with fruity flavors, Pinot Noir displays characteristics of Black Cherry, Raspberry, plum, and currant. Pinot Noir prospers best in the more recently planted vineyards located in the cooler climate regions of northern Chile and the mountainous areas of Alto Maipo.

Introduced into Chile with the intention of replicating the enormous popularity of its American cousin, Chilean Zinfandel, although a newcomer to the international wine world, is quickly establishing itself as a varietal to be to be taken seriously in its own right.

A flexible grape that produces different wines ranging from light to full bodied, Zinfandel can be recognized by its zesty, berry fruit tastes and aromas. Chilean Zinfandel, baked well done under the intense heat in the Maipo Central, is well ripened by harvest time, in some cases producing alcohol levels in excess of 16%.

Sauvignon Blanc, grown in vineyards amongst the ocean breezes of Pacific Maipo, produces a highly aromatic wine with characteristics of citrus fruits, crisp apples and pears. A light to medium bodied wine with a normally dry finish, Sauvignon Blanc makes for a very pleasurable drinking experience, paired with food, on its own, or as an aperitif chilled during the summer months. The more ambitious winemaker will oak Sauvignon Blanc to bring out a smooth vanilla type flavor.
