One of my favorites. S-04 has a bit of a tang, but it is an excellent yeast strain, with very good attenuation and flavor characteristics; for any number of British yeast flavors, you can get 99% of the flavor profile with s-04.

Last Saturday I re-hydrated this yeast for 30 minutes in 90 degree water. I splashed my wort and stirred to aerate. I pitched around 5:00 PM and moved my 6.5 gallon bucket to dark warm room. The wort temp was 66 degrees and the room was 67 degrees. The next day around 3:00 PM it nearly blew the cover off the primary bucket.

I ran to the hardware store and picked up some 1/2" tubing to make a blow off tube. When I left for work on Monday it had settled down and was still bubbling away at a fierce pace.

Every time I have used this yeast there has always been a nice firm yeast cake on the bottom and attenuation has been around 75-77%. Safale S-04 does a great job, just be ready for some aggressive fermentation!

I have dry pitched in the past and it seems to work much better if you re-hydrate for 30 minutes. I will purchase the yeast again.

This yeast is a lot like the US-05. It too is a cheap dry yeast that gets the job done with a single packet. The S-04 leaves a bit of spice, unlike its super-clean-fermenting cousin, but nothing over-the-top. The downside to this is that, like the US-05, the S-04 won't give you some of the complex characteristics that you might get out of flavorful strains of liquid yeast. But if you're brewing a beer that doesn't emphasize yeast profile too much, and you want just a little bit more character than the ultra-clean US-05, the S-04 is an excellent choice. I use it in many of my weaker English ales

We are pretty new to the beer brewing and have loved the midwest kits and suggested yeasts. This one worked very well in the Happy Holiday Ale! The fermentation had started within an overnight, lots of bubbles. and was still going when we checked it recently to see if fermentation was complete.

I rehydrate with Go-ferm and have never had a stuck fermentation. It makes a good English style ale. Given enough time it clears and the yeast can be reused.

A five-star yeast all the way around. I have fermented with this yeast in temperatures ranging from 58-80 degrees F, and have not had a bad batch come from it yet (beer or cider). Despite what many say, this is a fairly clean yeast, and fermenting at higher temperatures has not caused undue fruitiness in my beer. It's a good choice for re-pitching as well, and I have gotten several generations out of a packet.

The only con I can think of is that it does not add a significant amount of character to any beer, but its versatility greatly outweighs this.

I use Safale S-04 and S-05 yeast for most of my beers. Its easier and cheaper than liquid yeast, and gives good results. It's also good to have as a backup in case your fermentation stall. Just whip up a starter and add it in to try and restart the fermentation.

Its inexpensive, easy to prepare, no starter needed, and makes good beer. It settles clear so my beer isn't cloudy. I use it for English ales, Porters, and Stouts.

I use this for many of my English style ales. It is consistant and predictable. It ferments well at 74-75 degrees without any estery off flavors. It has been my go to yeast for several years.
