This yeast produced a nice tart, dry Belgian style golden / Saison in the 75-80F temp range. I will gladly use this for Saisons in the future over fiddling with liquid yeast and making starters.

Used T-58 in 5 gallons of fresh pressed apple cider. SG = 1.052; FG = 1.012; PH=4.0 Fermentation temps ~60-65F
allowed to bottle carbonate after primary/secondary fermenation.
yeilded a very nice semi-sweet big apple flavored cider with a clean finish and minimal yeast overtones.

This yeast was bubbling twice as fast as Coopers (7gm pack) the next day. Tart flavor with fermentation at upper 70s. Coopers with identical (split) batch is a smoother flavor (using sorghum malt syrup and Simpson 60 malt fro color and flavor). Nice and clear with Clarity Ferm to crack the gluten.

I made a honey wheat with T-58 and pitched the yeast at about 10 PM. When I checked on the batch at 3 AM - it was already actively fermenting and produced a wonderful spicy aroma coming from the airlock. I just opened my first bottle (4 days in the bottle) and it tastes and smells great - with spicy clove and pepper flavor and a small touch of banana aroma and flavor. I will use this yeast again for any Belgian wheats that I make.

It produces banana and bubblegum esters like crazy at 72F.
It has a fast starting and vigorous fermentation, I used nutrient and Oxygenated my wort so it hit it's final gravity. Overall taste was ok.

Nice for belgian wit bier

I used this for a caramel belgian wit bier, it fermented out very nicely with a good flavor at even the higher temps of 70 degrees. This one does well at higher temps, so something to keep in mind for warm weather brewing.

Did a small two gallon batch that was split between two one gallon jugs. Poured 1/2 teaspoon dry on top of each one and took off almost immediately. I have never seen anything like it. Made a version of my Belgian Blonde hoping for a tasty brew. Going to keep a few of these on hand.
