I used Simcoe as my main bittering Hops in two pale ales that I recently did to compare Amarillo and Citra. It is a great bittering Hop because of its high AA and clean taste. It is my new go to bittering Hop.

One of the lowest cohumulone levels of any hop, even though the total humulone, or alpha-acid, and oil content is quite high. Provides an incredibly smooth bitterness that compliments, not overpowers, the sweetness of the malt. I also use it as a late addition hop which imparts a unique flavor and pine aroma. If I were limited to brew with only one hop, this is it.

I bought some of these hops to dry hop with for a rye p.a. that I was doing and I was very pleased with the results. They are very aromatic and left a bitter taste that was not overpowering and complemented the rest of the beer very well. This has become my new favorite dry hop for epa's and ipa's!

Simcoe is a great hop all around in my opinion. What I like the most is the feel and the aroma of this hop. Hands down my secret weapon for a great IPA.

I brewed an all-Simcoe pale ale with these (mostly late additions with dry hopping).
The bittering is clean and definitely present without being harsh.
The aroma of dry hopping these smells like a citrus fruit basket, but not like a orange/grapefruit only hop like Cascade.
The flavor is like the aroma but is dominated by passionfruit.

Simcoe is a good solid bittering hop. Sometimes overpriced but definitely worth the taste. Gave my IPA that good hoppy bite to it, and I only boiled for 30 minutes.

I brewed a big IPA and decided to try this hop for both bittering and aroma. I was pleasantly suprised at how well it accomplished both of these tasks (especially aroma). I will definately use these again.
