In my opinion, this is THE Belgian yeast to use. Attenuates like a champ (usually get well into the 80% range) and submits to temperature modification very well. I would, however, always recommend a blowoff tube with the yeast as it is always a VERY active fermentation.

After using the 3787 Trappist High Gravity Yeast on a Trappist Ale awhile back, I was so impressed, I knew I'd be using it again. In simplest terms..."What a Performer!" This is one of, if not, the best performing Yeasts I have ever used. Great attenuation! Great Flavor!

This is the second batch of Trappist ale that I've used Wyeast 3787 High Gravity yeast with; and, enthusiastically recommend to anyone and everyone interested in making Trappist ale. Excellent "Trappist" ale flavor, and incredible fermentation. I bumped this most recent batch up with honey and real maple syrup - looking to put a crisp edge to it, and subsequently kick the otherwise Trappist Ale kit up from a single to a double ale, and the explosive fermentation of the Wyeast had no problems with the increased ABV. OK! So I'm an absolute Trappist Ale Junkie, and the Wyeast 3787 is the only way to fly in my estimation. Crazy fermentation, and excellent flavor. If you like Chimay, you need to get a Trappist Ale kit and use this yeast. You will not be disappointed! P.S. It is a true high-gravity yeast and can handle the ABV, so if you want to take the kit from a single to a double style ale - this stuff can handle it. Cheers!!

I made a starter and when i poured this yeast in, it took off. It made a big Krausen and continued vigorous fermentation for 5 days. I gave it a month to make sure it had done the job before bottling. When it was done it cleared well and the final gravity was down to 1.01.

Made a very Chimay-like brew using this yeast. This is my favorite Belgian yeast for my high gravity beers. An extremely aggressive fermentation with very few off flavors. Use a blow off tube and watch your temps as it can warm up quickly
