Evolved to be picked up and carried about by birds in order to spread its seeds, the wild Tepin chile (aka bird eye pepper, chiltepin) is small and berry-shaped. Don’t let its size fool you, these cute little chilies pack a serious punch. Though it still being debated, many people feel that tepin chiles offer more brief heat then other varieties, fading away after an intense period rather than smouldering.

They have a nice taste if you can get past the spiciness. When I make my sauces I simmer the Tepin peppers for a while to get out all the flavor and cut down on the heat. The key to a good sauce is the flavor not the heat. Its good with anything, but I like it with Chicken best.

I simmer the sauce to reduce the heat, that way I get the good flavor and aroma, but am not anihilated by the heat. People seem to think you have to suffer, but you don't know your materials and how to work with them.

I met my match as these peppers are too hot. I removed all the seeds I could but it didn't matter. The aroma is nice and the taste is very good, until the heat hits. Next time I'll cook the peppers more, to help reduce the heat just a little. They go well with chicken.

These are seriously hot. I actually spend a little time trying to remove some of the seeds, to hold them out. The aroma and taste are fantastic though. I made a hot sauce with the peppers, some garlic cloves,cider vinegar, sweet paprika, and a little xanthan gum.
Its a killer sauce that I will be making again.
I recommend getting some xanthan gum to use with these peppers.

This is a really hot pepper. I don't care if it "fades" quickly, its super hot. I used this in a chicken sauce but I wont make it again.
