Winter ales are designed to warm you from the inside as well as give audience to a host of unique flavors and spices. Plan on brewing this one 4-6 months in advance of your target release date for a proper maturation. Our ingredients for this recipe include: 6 lb. Dark liquid malt extract, 3.15 lb. Munich liquid malt extract, 4 oz. Carafa II, 8 oz. Munich, 8 oz. Cara Wheat, 4 oz. Chocolate Rye, 4 oz. Melanoidin specialty grains, tsp Caraway, 2 oz. of hops, priming sugar, muslin bag, and yeast.

I brewed it without enough lead time so for the winter it wasn't that good. But now - after a total of 6 months , it's a good beer. I like the spices though it didn't carbonate much.. Next time I'll brew it 6 months in advance..

Brewed this on July 4, let it sit in primary until early December. Bottled 12, kegged the rest. Tapped the keg at my birthday party. Nobody liked it. Dark, strong, with a bit of a caramel flavor. Nobody but me finished the first glass.

Now, 2 weeks later, it seems much improved. The flavor has mellowed quite a bit. I describe it as decently mediocre. Not bad, but still not good. Drinkable, for sure, but not a brew I will make again.

Out of almost 60 kits that I have brewed, I had to say this is my favorite. I only wish that I made 2 of them at the same time b/c I hate having to ration it. The taste is nothing short of awesome. It's like a mild chocolate porter. I will never have less than 2-3 of these kits on hand ready for winter ever again....EVER!

Very nice dark beer. The added grains really help build body and the hops are somewhat mild and hidden. Very nice beer for winter months.

I recommend brewing this product in April or May so its ready by Thanksgiving. The longer this beer sits the better and smoother the taste.

This is a great kit! Be sure to let it age for about 4 months+ before drinking. The dark grain gives it such a great flavor. The hops are laid back letting the malts do their thing. And the ABV will keep you warm on a winter day too!

I brewed this beer in November of 2011. Three weeks in the primary and a month in secondary. A few weeks after bottling I gave it a try and it was just to over powering. The orange spice was way too much for my taste. I forgot about this beer and decided to give it a try a couple of months ago (May 2013). Now that it has aged this beer is freakin' awesome. The tastes have all smoothed out and it leaves you wanting more. I'm trying not to drink to much now that I am sitting here in mid July. I look forward to drinking this on a cold winter night, because it is definetly a beer that will have you feeling that warmth in your face after a few.

I followed the instructions, used wyeast with a starter. Primary for 10 days, secondary 4 months. Did not even try it until it had been in the bottle for 2 months. This is an outstanding beer.

Beer pours a chocolate brown. Aroma is dark fruit: raisin, plum, port. The caraway is not really present in the aroma and next time I will double the amount. The 1st sip is again more dark fruit. Some coffee too. A tad, just a tad of the caraway comes thru. Flavor also reminds me of the crust of baking herb bread. Caraway/spice bread. Delicious. Rich, full body but not cloying. Mild conditioning/carbonation. Perfect for a beer aged this long. This is a beer that needs to be laid down for at least 6mo. I brewed this one a year ago and bottled it 8mo ago. If you like winter warmers, this one's for you.

This is a great beer...if your patient. The darker grains this beer is made from need a long time to blend there flavors through. So, while the fermentation is quick, the flavor are slow. After 4 months in a bottle, I cracked one open. OMG! It is rich! Going to wait a few more months before I try another.
