Winter ales are designed to warm you from the inside as well as give audience to a host of unique flavors and spices. Plan on brewing this one 4-6 months in advance of your target release date for a proper maturation. Our ingredients for this recipe include: 6 lb. Dark liquid malt extract, 3.15 lb. Munich liquid malt extract, 4 oz. Carafa II, 8 oz. Bonlander Munich, 8 oz. Cara Wheat, 4 oz. Chocolate Rye, 4 oz. Melanoidin specialty grains, tsp Caraway, 2 oz. of hops, priming sugar, muslin bag, and yeast.

We strongly recommend ordering dry yeast in the summer months. We do include complimentary ice packs with all liquid yeasts, but it is difficult to guarantee that the ice packs will survive the trip given transit times and particularly hot temperatures.

This beer is really good. For the past several years I have been brewing the Happy Holiday Ale which I think is similar to a Harpoon Winter Warmer. This beer is a dark ale that has some wintery undertones in the malt as well as the yeast I suppose. It doesn't taste like a Christmas tree like the happy holiday, nor should it, but it does have those nice winter ale undertones. I will definitely be brewing this next year.

This is a beer that should be thought of well in advance. I Brewed in March 2014, kegged after the secondary and let age for the past 9 months with oak cubes and just tapped it. Used the dry Safe ale S05 yeast. It is a very good dark beer with little hint of winter tastes (caraway). Just a good full rich dark ale somewhere between a heavy porter and a stout. The oak cubes have added another layer of complexity. Would be nice on nitro, CO2 head does not last long but does not distract from the experience. Highly recommend this kit as a nice heavy all around winter beer.

I took everyone's advice and started brewing this beer in April. I steeped the grains in 3 gallons of water, at 150-F, for 30 minutes. Once the malt extract was added, I added 1/2 gal more water to the boil. To help cool the wort off faster, I use a wort chiller and add one frozen gallon of water. I topped off the water to around 5-1/2 gaIlons. I used two packets of dry yeast. One month in primary, three months in carboy secondary and two months in the bottle. 6.56 ABV. I served this at a party at the end of October. It was a hit. It has a smooth taste and continues to improve with age. Good carbonation. A great caramel flavor, color and head. I just wish I made more than one batch. I will make this one again, because it is "Well worth the wait". Thanks Midwest for a great kit.

I've brewed many kits at this point but this is the best. 3 weeks in primary, 2 1/2 months in the secondary and a month and a week in the bottle. Nice head...hints of caramel and nuttiness. I used the white labs liquid yeast. Highly recommend. It will take more than 2 or three weeks to build up carbonation so don't worry.

I brewed it without enough lead time so for the winter it wasn't that good. But now - after a total of 6 months , it's a good beer. I like the spices though it didn't carbonate much.. Next time I'll brew it 6 months in advance..

Brewed this on July 4, let it sit in primary until early December. Bottled 12, kegged the rest. Tapped the keg at my birthday party. Nobody liked it. Dark, strong, with a bit of a caramel flavor. Nobody but me finished the first glass.

Now, 2 weeks later, it seems much improved. The flavor has mellowed quite a bit. I describe it as decently mediocre. Not bad, but still not good. Drinkable, for sure, but not a brew I will make again.

Out of almost 60 kits that I have brewed, I had to say this is my favorite. I only wish that I made 2 of them at the same time b/c I hate having to ration it. The taste is nothing short of awesome. It's like a mild chocolate porter. I will never have less than 2-3 of these kits on hand ready for winter ever again....EVER!

I recommend brewing this product in April or May so its ready by Thanksgiving. The longer this beer sits the better and smoother the taste.

This is a great kit! Be sure to let it age for about 4 months+ before drinking. The dark grain gives it such a great flavor. The hops are laid back letting the malts do their thing. And the ABV will keep you warm on a winter day too!
