I used this when making a dry sherry. The Sherry was dry and crisp, good, but not great. Maybe a little too much on the dry side. Next time I'll use the EC-1118 yeast for a Sherry.

A great yeast, it's robust, with minimal foaming. very clean in flavor, and has never failed me. I use this for almost all of the champagne or dry wines I make.
I highly recommended it.
