Depending on whats in the Mead I vary the amount I use. I take 4 ounces and a scientific scale and measure out powder in Centigrams and mix it in till I'm satisfied with the taste. Start small with a sample, then scale up. Don't be afraid to under use the acid. Browse 2 questions Browse 2 questions and 5 answerscan this be substuted for tannin ?BEST ANSWER: I think not - it is only to increase the acidity, to insure the proper crispness to the wine - tannin is for another purpose altogether.Would I more or less acid blend in key lime wine?BEST ANSWER: Most recipe for lime wine will call for the addition of some acid blend - maybe about 1 tsp per 5 gallons. Best to find a recipe and follow it closely. Cheers!
