DetailsOur version of this Belgian style wheat beer includes coriander and orange peel. Witbiers are slightly tart and are a great summer beverage. The Belgian Wheat Wyeast #3944 is recommended and is responsible for this beers refreshing flavor.
Ingredients: 5 lbs. Domestic Pilsner, 3 lbs. White Wheat, 1 lb. Unmalted Wheat, 8 oz. Carapils®, 1 oz coriander, 1 oz. orange peel, 1 oz Liberty hops, 1 oz Hallertau hops, priming sugar, and yeast. Yeast upgrade options: Wyeast Belgian Wit # 3944 or White Labs Belgian Wit # 400.

The taste was very mild and not spicy at all. In fact, my one complaint is that it is missing the level of spice that I am used to with this style. This beer came out tasting a little more like an American style wit due to the lighter spice. I entered this beer into the state fair and came away with second place. The judges commented that it was a bit too lightly spiced. I'm not sure about that, but it WAS good. I used Wyeast 3844 which along with the orange peel and coriander gave it a mild spiciness. I think it could have used a bit more coriander. As far as bitterness?BEST ANSWER: I thought it was close, you taste a little more of the Coriander than you do in Shock Top, when I make it again I will probably halve the amount of Coriander. If you are using a pump I would keep the Coriander in a bag - I had all kinds of issues with the Coriander clogging the pump and whirlpool fitting.
