I will bottle and age it for six months but I was happy with it and decided to do another batch right away. The second batch was hard to get started, not sure why. I used some yeast that I have had for awhile and even though I started it before I pitched it in it did not get the ferment started. Added more yeast and still real slow. So I added yeast nutriant and it took off and is now in the 3rd day of rapid ferment. Things look good and I am sure it will be very good wine. I used two cans of fruit base per 6 gallons to make a very tastey wine.July 12, 2019Purchased

I've oaked it, periodically added additional sugar (to push the alcohol level) and I've just added just a bit of glycerine (gives it just a hint of sweetness). I'm just about ready to bottle, but as is now it is a real treat. I'm looking forward to seeing how it improves with aging.
