What Is Kombucha?

Kombucha is sweetened tea combined with a beneficial concoction of yeast and bacteria often called SCOBY (Symbiotic Culture of Bacteria and Yeast). The bacteria and yeast partner up to give kombucha it’s one-of-a-kind tang by fermenting the tea. To get more technical, the yeast consumes all sugar from the tea and produces alcohol - which the bacteria eats to produce beneficial acids like acetic and gluconic acid.
