The risk of infection is high once its open.How long and in which conditions can I keep the juice before starting the wine making process?BEST ANSWER: i didnt start the wine making process until 2 months later kept it in the house in a cool place. another time i didnt get the chance to make the wine for 2 month but i left kit where it got warm [ i live in fl] and the stuff you add to it was dried outInstructions do not mention what to do or when to add the Bentonite. As this is included in the kit one would assume that it would also be in the instructions. When do you add the Bentonite? Does it need to be premixed with water before adding? The bentonite goes in first:
Add about two cups of warm water to the fermentor and sprinkle and
dissolve packet A (Bentonite) into it.
