DetailsCalcium Carbonate is used to lower the acidity in wine. 2.5 grams per gallon will lower the acidity approximately 0.1% You do not want to adjust your wine more than 0.3 - 0.4% or you will end up with a chalky/ gritty taste in your wine.

Just don't go over board or you can end up with a gritty tasting cider. I shoot for a 0.2 adjustment at most.November 2, 2013Good Mineral for All Grain BrewingI used this to increase the Carbonate level of my brewing water to match whatever profile I am going for. This small 2 oz. jar will go a LONG way considering you only add 1.0-2.0 grams per batch depending on what you are going for. So for very little money you can make significant improvements in your All Grain beer and it goes a long way. Plus you can reuse the bottle over and over, the cap reseals nicely.December 3, 2013pH adjustmentMy water is soft with no buffering ability thus I need this to prevent the pH of the must from dropping too far. It took some trial and error, slowly adding it, to figure out how much to add.
