Basically, anything labeled crystal, caramel, or cara-something are crystal malts. Crystal malts are steepable and they’re generally used to add sweetness, body, flavor, color, and foam retention to both extract and all-grain brews. They’re usually named based on color - which can be very specific and scientific, based on the Lovibond color scale (Caramel 60 L), or pretty subjective (Dark Crystal). As a general rule, the lighter-colored crystal malts are more strictly ‘sweet,’ while darker crystal malts can add toffee and caramel flavors and some roastiness or nuttiness in addition to sweetness. On the extreme light end, there are dextrin malts - these malts add dextrins (unfermentable sugars), which contribute body and a thicker mouthfeel to beer without adding color or flavor. Many maltsters have their own trademarked brand names for certain malts - so CaraFoam® (Weyermann®), Carapils® (Briess), Caramel Pils, and Dextrin Malt are all different names for very similar malts. On the dark end, crystal malts such as Special B®, Extra Special Roast, and Extra Dark Crystal can add a wide variety of flavors which may include burnt sugar, raisin, prune, cherry, or other dark dried fruit. Crystal malts in the middle tend to offer varying degrees of sweet caramel flavor, hence the name.

I don’t see how much is included with each selection.BEST ANSWER: All of the imported grains are in 25 KG bags ( 55 lbs ) but most all domestic grain will be in 50 lb bags. The exception to this is the Rahr grain, which they switched over to 55 lb bags in 2017.What is the Lovibond?BEST ANSWER: L is the Lovibond scale that indicates the degree of roast. Lower is lighter roast (10L) would be lightly roasted and be sweeter. Ref. Lovibond also known as degrees lovibond or abbreviated as L is a scale for measuring color originally introduced by Joseph Lovibond in the 1860's. To determine color the sample is placed in a "Tintometer" which also contains several numbered discs of tinted glass. The Lovibond color is the value assigned to the disc whose color most closely matches the sample. The original Lovibond scale was used to measure gas colors, but has since expanded to measure the colors of oils, chemicals, foods and beverages. For brewing, Lovibond is used primarily to specify grain colors - for example a dark roast malt might be 400 L, while a pale malt might only 2 or 3 L. In this application it is actually the color of a laboratory wort prepared from a sample of the malt under specified conditions whose color is determined. In older books, beer color may also be measured in Lovibond.
