Product Details

The oldest vines (between 60 and 80 years) produce fruit unlike any other. This Cabernet Sauvignon has stupefying levels of fruit and extract.

The blackberry, blackcurrant and jammy notes give way to pepper, mint, cedar and black cherry. Dense and dark, with rock-ribbed tannins when young, it will round out to a smooth lustrous finish that goes on forever at its peak.

Sommelier Select™ Old Vine Cabernet Sauvignon includes grapeskins* in the kit. Grapeskins are an excellent addition to wine kits. Not only do they enhance body, mouth-feel and tannin, they also boost color, flavor and aroma. This is because all of the raw ingredients for these things are found in the skin of a red grape. All of our red juices are macerated in our wineries to get the most out of their skins, but adding an extra dose of skin material turns up the volume on the wine's character.

*This recipe kit uses a RealGrape pack to boost flavor and body. Because the grape skins are not dried, they take up more space in your fermentor. This recipe requires the larger 7.9 gallon wine fermentor.

Finally got it started

Was out of town, and finally got the Old Vine Cab Sav started. Just got to the point of changing over to the secondary fermentation, everything going fine.

Just table wine

I dont see how they can honestly say that 3 year old skins from non descriptive grapes increase the character of unidentified juice. My vines are only thirty years old and produce a higher quality cab sav. See my review on the OV zinfandel if you want to know about these kits. The stars default to five and I question some of the ratings.

Still on oak

So far, so good. Currently aging in glass carboy. I didn’t use the supplied wood chips. Instead I am using 3oz of bourbon barrel chips and 4oz of medium/medium plus oak cubes. I did get to sample some extremely fresh wine between the secondary and my aging carboy and it seems to be off to a great start. Planning on bottling before Thanksgiving at around the 3 month mark.
