Super High Gravity Ale Yeast from White Labs originates from England and can handle up to 25% abv! Great yeast to help restart stuck fermentations, especially big beers that typical yeast may stall out ahead of time on. This yeast can ferment up to 25% alcohol when used correctly. It produces ester characters that increase with increasing gravity. Malt character dominates at lower gravities. As with any high-gravity beer, extra oxygenation and yeast nutrition can help this yeast to perform to its fullest potential. To achieve >25% ABV, sugar needs to be fed over the course of the fermentation.

Tips to achieve full attenuation with this yeast:
- Oxygenate your wort with O2
- Add Yeast Nutrients to the wort
- Make a starter - 25% abv requires 3-4 times the amount of yeast than a typical batch.
- Staggered late additions of simple sugars.
*NOTE:*During summer months, we include q complimentary ice packs with all liquid yeast orders. However, it is difficult to guarantee that the ice packs will stay frozen given transit times and particularly hot temperatures. For this reason, we recommend ordering dry yeast during summer months.
