This classic Italian red wine is bone-dry and smoothly tannic, with a medium-high body, firm acidity and subtle cherry fruit offset by notes of herbs and mushrooms. It's velvety mouthfeel gets silkier and more elegant with ageing, and when fully mature it shows notes of vanilla and tobacco in the finish.

On 2nd ferment of 2nd batch. First went too quickly with so many wine drinking friends and family around. Using add-on French medium toast cubes again to add the extra subtle taste we desire. This wine won’t disappoint.
One of my favorite Italian wines. Wine acted as it should during fermentation and cleared nicely. Some take much longer to clarify, patience is a must. Wine is conditioning in carboy with a few medium toast oak cubes. Will bottle soon and store for 6 months before tasting. I’m confident it will be great 😊
The kid arrived promptly. I put it into production promptly. That said, it’ll take a while before I know how it taste or how it is. It is in secondary and stabilized. I will probably racket again in the next week or so. After that, I will wait a year before I drink it.
I'm bottling my 2nd run of Montepulciano. Was able to hold of a year before grabbing a bottle from the last batch and it was worth the weight.
We sampled the wine yesterday as it is still in the clearing phase. It's really good, and drinkable right now. We'll bottle in another week or two, and have friends over to taste.
