I gave it a week in the primary, two weeks in the secondary. I have been tasting a bottle or two per week over the last few months and it keeps getting better. Now that It is hot out I am drinking more summertime beers so I will stockpile the leftovers until the fall.June 21, 2013suprise!I have tried some copper ales at brew pubs in PA. and VT. and didnt like them. I got this kit because I wanted to try re-using yeast from the altbier, the 1007 and this kit was the only one that used it. Man was I suprised. I love this beer.Malty,hoppy ,smooth and super drinkable. I like it better than the Altbier. Great maltiness, balanced hops, and the german ale yeast really give it a fantastic flavor. Nothing extreme about it, but really good taste, color and price. I'll be brewing it again as a filler beer while I wait for some of the more extravagant ones to mature. We brew this one regularly and it always comes out well. Using some super moss gives a clear, balanced, tasty and easy to drink beer.
