Pretty impressive for a novice brewer !May 19, 2016BE WARNED!Because of the sugars in this beer it is a very angry fermenter. Attach a blow off to the primary or be prepared to deal with the consequences. I added a whole orange throughout the brewing process in a 2/3 1/3 ratio. I ran 2/3 of the thing through a cheese grater 30 minutes into the boil, then another 1/3 with about 10 minutes to spare. It is a very high (11.5 percent) alcohol beer, but doesn't overwhelm you with its alcohol flavor. At 2 weeks it will taste like touching the face of god, at 4 weeks the flavor loses its sweetness and transforms into a very mature, complex beer. I carbonated this one high in a Lambic /Champagne style.June 26, 2010Put a warning label on this oneAwesome beer. Let it bottle condition for at least a month. I WILL brew this one again...and again!!!!!!November 27, 2010It's a keeperI have made this brew a few times now with awesome results. I usually add a little more extract to bring up the ABV. I have a Grand Cru in the secondary right now and it's measuring at 10.5% abv and taste great. It has quickly become a favorite. Highly recommended.December 7, 2010A Good BrewThis was my first brew. Used the Wyeast Activator. Followed the instructions, 1 week in the primary, 1 in the Secondary, 2 weeks in the bottle. Very good even at that stage. They are going onto week 4 now and the flavor is smoothing out-- the flavor is less "raw" or rough around the edges than it was initially. Overall, a fantastic Belgian.
