We bottled two weeks ago & I know you are supposed to give it 2 months to mellow & let the flavors blend but let me just say, I am not usually a fan of dark beers but I was pleasantly surprised by this one!!! The smell of it is wonderful, so warm & Christmas-y, and it wasn't bitter like I normally expect from dark beers. Can't wait to try it again in a few more weeks! I will be purchasing this again for next year I'm sure, only next year I will be wise and purchase in the late summer to give it ample time in the bottle before we drink it during the holiday season! I feel that this is a beer that will be enjoyed by most beer drinkers! Its very festive & warm.December 17, 2012Not a bad brew at allI brewed this about two months ago and let it sit in primary for about three weeks before transferring it to secondary for one month. I kind of wish that I didn't move it to secondary at all, or at least for that long, because the spice flavor really died out with that much aging. There is a slight cinnamon ginger aftertaste, but otherwise the malt is the strongest flavor profile. I would brew this again, but I might skip the secondary in favor of a longer primary. _x000D__x000D_But that's what I get for wanting to free up my primary fermentor for another brew!December 18, 2012happy holiday!!!Brewed the kit as instructed steeping the grains for 60 min. I also, as advised by another reviewer, left the cinnamon stick in the primary fermenter for the first week. _x000D__x000D_As a note, the carbonation was low after 2 weeks but was great after 4 - 5 weeks. Very tasty with a caramel and pepper finish. 1 year agoWarm in the WinterThis has a very complex flavor and truly does warm you up. I followed the kit recipe exactly and wound up with 6.4% ABV. Add in the cinnamon, nutmeg, and ginger, and it's a rich, warming brew, even when served ice cold. This also has a good mouth feel with a full body. This is mildly hoppy with a rich maltiness and subtle hints of the spices. I brewed this at the end of August and opened it for Thanksgiving and will be sending it out for Christmas gifts. _x000D__x000D_I did have an issue with bottles bursting during bottle conditioning. I haven't ever had bottles burst during conditioning, but three of the 12-oz bottles I used shattered while in the closet. The box has an estimated ABV of 6.7%. Mine measured a FG of 1.02, which is an estimated ABV of 6.4%. I left this in primary for 2 weeks and in secondary for 7 weeks. I likely had a stuck fermentation in Primary, leaving unfermented sugars, resulting in the bottle bombs. When I opened the instructions it said it was best to let it sit for 4 months. I would have ordered it two months earlier had I known that._x000D_The taste was ok after two months but I had a hard time tasting any of the spices. It was ok, but not great. _x000D_It's been about three months and it's definitely getting better tasting (though I've been drinking it all along and am now down to a few bottles). If I order this again I'd put more spices in than what comes in the kit.January 22, 2013ImpressedThis was my second attempt at homebrewing and in spite of my less than refined technique, it came out great. Very rich, malty body, spices were just right and the hops balanced everything very well. As I said, in spite of my less than refined technique (a lot fo yeast got through), my friends and family really enjoyed this beer. You can certainly add additional spices to the secondary if you would like. You can boil the spices for a few minutes before adding them in order to ensure that they are sanitized. With more delicate spices, you can use some vodka in order to sanitize before adding, then using this tincture to dose the spices.Instructions say 2 week, primary, 2 week secondary, and 2 week bottle conditioning. That's 6 weeks, your photos are showing a 2 month ready time. Which is correct?BEST ANSWER: Hi there, timing is somewhat flexible. It can be ready in 6-8 weeks depending on how long you keep the beer in secondary.
