DetailsOne of our most unique recipes on our menu of homebrews. Ah, who are we trying to fool. This is Autumn Amber Ale recipe with 2 pounds of Minnesota clover honey added to it. The hint of roasted flavor combined with the smooth sweet flavor of the honey make this a recipe worth trying.
Ingredients: 9 lbs. Domestic 2-Row barley, 2 lbs. Clover Honey, 8 oz Caramel 80L, 2 oz. Roasted Barley, 2 oz. Special B, 2 oz. of hops, priming sugar, and yeast.

When honey ferments, it doesn't leave a big honey flavor. If you want a big honey taste, add a couple pounds of honey malt to this recipe. It's fine as is, but the honey is subtle. Could use a bit more bittering hops at 45 minutes, if I make it again, but it's a very solid kit, and a great value, expecially because it comes with two pounds of high quality honey.November 26, 2012A little mildI added an extra half pound of honey to enrich it. Its a solid Amber beer, not too heavy, good for drinking with friends. Fermentation took a week. I added the honey after 5 days, when the yeast were still floating around but had eaten the malt sugars. Then gave it another 3 weeks before kegging. It has a very nice flavor and kind of a fruity aroma that enhances a clean crisp malt flavor.
