Added the included honey at the 30 minute mark, and an additional pound of unfiltered wildflower honey at flameout. I am by no means a hop-head, so I halved the bittering hops and followed instructions for the aroma addition. This beer is absolutely frigging amazing! Fresh crisp taste, slightly sweet, a clean finish with no after-taste! ABV came out to slightly over 8 percent, but there is no alcohol taste at all (makes it a little dangerous). Family and friends love this beer! A friend who has been homebrewing for 10+ years said it was one of the best home brewed beers he's ever had. Doesn't get any better than that! Plastic Bucket Fermentor, No bottling, just kegging._x000D__x000D_I added an additional pound of Light DME to the wort at boil start, and added the honey with 15 min left of 60 min boil. Followed directions for Hops. 2 weeks in Fermentor and 1 week Carbonating and chilling in a Carney Keg. I'm surprised at how good it is already one week out of fermentor. I added the priming sugar to the wort too (I dont bottle). The bitterness level is perfect for me, no cidery flavors, a bit of pleasurable sweetness, and good head retention. My ABV is just under 7%. I cant think of anything on the Grocer shelf that I'd rather drink right now. My wife says it's her favorite so far. I already have another HoneyBee kit coming in the mail. Not knowing what to expect, i was pleasently supprised on how tasty the beer turned out. That is the case with the honey bee ale. Very accessible for my friends and family that can't handle darker (better) beers, and one I enjoyed as well. This was my favorite, I love the honey flavor! The insructions said 10 th 30 minutes in the boil with the honey, I split the dif and did 20. I was very pleased with the sweetness, and honey flavor.May 9, 2013Great light bodied beerI found that following the recipe directly resulted in a rather "bland" tasting beer in the end. Don't get me wrong, it was still delicious, but I tend to want a beer with a very obvious flavor profile. I found a very nice few touches to really make this beer "pop". First off, I don't add the honey till after the boil was complete and the wort is chilled an ready to add to the primary. This brings out a lot more of the honey flavors, while leaving fermentation unaffected. Then, after a week in the primary I dry-hopped with 1 oz pellet cascade hops. This added and amazing floral nose and an extremely subtle floral spicyness to the aftertaste, as I found the hop charactor in the original recipe to be too subdued. This is a very good starter brew kit. Any changes in the ingredients are very noticeable in the finished product. I encourage everyone to use this kit to do some experimenting with different hops, yeasts, and spices.May 16, 2012It's worth the wait!I can't say enough good things about this recipe. not very sweet
I just finished my first fermenting of this beer, I was curious about what it taste like so i tried it and i was surprised that it wasn't very sweet, is that normal?BEST ANSWER: I think anyone who brews this beer for the first time would first expect a "sweet" honey taste, but the beauty is when you realize the dryness in the finished product is from the aggressive yeast attenuation of the sugars in the honey. I found the alcohol in this beer to be extremely uplifting. A unique quality discovered when brewing with honey!What wet yeast do you recommend?BEST ANSWER: I found that with the added suger from all the honey that fermentation is really not a concern and dry yeast works just fine. Of course I always hydrate my yeast before pitching it anyways.Just racked to my secondary today after 2 weeks. Checked my gravity is at 1.002. Did I do something wrong ? Still have some bubbling in my carboy. Should I still leave in secondary for five weeks.BEST ANSWER: Your starting gravity should have been between 1.055 and 1.060. After 2 weeks it is probably finished fermenting especially with the gravity where it is. I usually rack to my secondary with this kit after 6 days and then let it age for a few more weeks. So no I don't think that you did anything wrong. You can let it age in the secondary for a bit longer if you are worried but I don't think that the gravity is going to budge much from there. Enjoy!!
