Wyeast 1084 is an ideal ingredient in the production of stouts, porters, wee heavy, ambers and red ales.

We strongly recommend ordering dry yeast in the summer months. We do include complimentary ice packs with all liquid yeasts. It is difficult to guarantee that the ice packs will survive the trip given transit times and particularly hot temperatures.

Details

This yeast ferments extremely well in dark roast worts. Beers fermented in the lower temperature range produce dry and crisp beers to fruity beers with a nice compexity in the upper range. Ester production is enhanced with fermentation temperatures above 64F (18 C). Flocculation is low to moderate with filtration typically required.

Can this be added to some washed, U.S. 5, salvaged from a recent all grain amber, for use in a stout?

BEST ANSWER: If you are going to enter this stout in a competition I would not mix the yeasts. The US 5 attenuates more than the 1084 and the 1084 can add a flavor component depending on fermentation temperature. The judges might notice the stout doesn't adhere to the published style. If you are making this beer for yourself I would go for it. A good experiment.
