Excellent-especially for beginners
I was nervous brewing this as my first brew, but the flavors in this kit are great and will give you a real ego boost. Since it was my first, I just followed the instructions and didn't try to get fancy. Still got a rich flavor. Beautiful color and head. I got about 4-5% alcohol content. It was very easy to drink and as a result very popular. Everyone was asking for more to drink/take home._x000D_Single stage fermentation wasn't a problem for this brew, but if you can, definitely throw it in the carboy.

A nice complex stout - much roastier than Guinness, think more tuned towards Beamish or the stouts churned out these days by a lot of the New England microbreweries and brewpubs. An easy brew that started nice and aged beautifully. Keeping it under $30 for the activator Wyeast, a great beer for the price of a good beer.

Tastes great
I made this one for my wife. We both enjoy dark beer with a creamy head and a touch of bitterness. This one goes down smooth and it is easy to drink more than one or two pints after a long day at work.

Simply wonderful
Even with my admittedly substandard brewing techniques, this turned out just lovely. Great flavor, good head retention and lacing - you just can't go wrong here. I used the standard dry yeast, and it worked out quite nicely anyway.

Great first Stout
My first brew! Tastes Great! I will definitely use this one again. I agree with other posters that it will allow adding flavor profiles to the beer.

Good stuff
I like Guiness the best of all stouts, and this is more roasty than that. BUt, thats purely a subjective opinion. This beer, like all homebrew, gets better with age. I drank a bunch of these, gave some more away, and wasnt too impressed with it at first. but, I found one this weekend, and it had improved in the 3 months or so after bottling it. It is a GREAT value, and if you like Sierra Nevada stout and other more roasty, burned tasting stouts, this is worth the time and money. A hit.

Just tried my first bottle of this. I fermented it in primary for two weeks and let it sit in the bottles for a week. I can tell this beer is going to be awesome. Right now it has a little harsh bitterness that I'm sure will round out. The head is dense and creamy, and a rich black color.

This is the first Midwest kit that tried, and I can say that I will be making this one again and again. I opted for the Wyest Activator as I always have great success this way. This one is a great beer for all those Guinness fans, myself included!

Good as always!
I toasted coconut just for a lark. Added it to the fermenter for the same reason. Now I have a toasted coconut Irish Stout. To have on St. Paddys day while in the South Seas. hint. (It won't make it to St. Paddy's day!)

how do I know which yeast to buy?

BEST ANSWER: Dry yeast is best to ship in hot weather, liquid in cold. I think liquid yeasts perform better and flavors seem better in comparison to dry yeasts. I use both.
I want to boost AVB to be around 5.5%. What type of DME should I add and how much?

BEST ANSWER: If you were to add 2 lbs of DME, that would bring the ABV up to around 5.5 %. Use the light or gold, so it does not add any additional bitterness to the batch, but only adds malt sugars to increase ABV.
