The final product was a solid IPA with moderate bitterness and some interesting fruity/grassy notes that become more noticeable as it warms up. 10 months agoisland ipaI'm a big fan of hops from New Zealand, they have a great aroma to them. This beer has a nice citrus note to it. I didn't detect any pepper in my brew though. Nice mellow hop flavor, and enough ABV to wash away any ambitions you might have for the day.April 28, 2013WowVery nice hop flavor, as some have said it's not the citrus you'd expect, it definitely has and earthy (? I think that's the word I want) flavor to it. I used a yeast nutrient with mine and was easily able to boost the abv to 7.8%. A great beer to sit on the porch with a cigar with. I will say if I did it again (I'd build the recipe myself) I'd substitute in some citra hops, as that was the flavor I was really hoping for. Nothing against the kit, it's got great flavor out of the box. Though tinkering with recipes is fun, I followed directions with this one. Being brave, we had an initial tasting the day after Christmas with a mixed crowd of family and friends. Though it didn't have the "slap in the face" flavor of some IPA's, it was subtle and smooth, with lots of floral, citrus flavors. A good choice with many foods. Cheers!December 27, 2013ALL RIGHTI gave my "test bottle" a taste. I "bottle age" for 8 weeks. I would say this beer will be very interested at the end of the 8 weeks. Nice color, aroma from the hops plus the dry hopping. So far waiting for damn good IPA.February 10, 2014

You can use a hydrometer and fancy precise calculations to be more exact. However, I generally figure .75% per pound of sugars. The more sugars, the longer it takes yeast to turn them to alcohol.
