That is the secret for cascading coffee. if you change to a nitrogen enriched cold brew you should be good. However with a tap conversion kit you can use a regulate nitro or beer gas cylinder . Or, if you leave it connected and the liquid absorbs some gas over time, it may only get one keg fully dispensed. Thanks for your question! Yes, this system would also work to dispense beer. You would want to carbonated it lightly though to get the traditional stout carbonation.
