These are backed up by blackberry and black cherry aromas, while an undercurrent of leather and gamey-earthy notes flirts with pepper and tobacco to draw out the finish.

South Americans know Malbec's strength, and they serve it with spicy grilled meat of all kinds--lamb, venison, beef and pork--but it works equally well with robust spicy foods, especially Mexican Mole.

I have purchased about 5 Malbec kits, and it is one of our favorite wines. I had a 'stuck' fermentation in 1 of the kits & ended up bottling a sweeter version. I will purchase this again.

How long does it take for fermentation to start? It's been a day and no action yet.

BEST ANSWER: Greetings Stephen!
I've done several Malbec kits with different results. Slow fermentation can result from many factors. Residual sterilizing agent, cooler fermentation temperature, dead yeast etc. I usually mix 3/4 yeast packet to 1 cup 80 degree juice & tbsp of sugar as a kick-starter reserving the 1/4 packet as a backup or booster in a day or so. I've had fermentation start within 10 hours - 3 days in different batches. Usually cooler wine must was the problem but the eventually kicked in gear. After 4 days and no fermentation draw some must and mix with 1/4 cup sugar add a little yeast and supercharge it. I've found using a plant seed starting mat beneath the fermentation container also helps, keeps the must from chilling to low. Hope this was helpful. Cheers!
How many hours does it take until the airlock starts showing fermentation has started. It's been a day and nothing yet?

BEST ANSWER: When I used this kit it took about a week. I thought something was wrong, but it just took some time for the yeast to start working. I had actually ordered more yeast because I thought the first batch was bad, but by the time it arrived, it was bubbling away.
