I add a specific amount of potassium metabisulfite in addition to what they provide in the kits, and top up and let it sit in the car boy for roughly 12-22 months racking three times over that period and leaving oak cubes in it for a majority of that time. And then bottle. Never had a bad batch and I have 10, 6 gallon carboys and have been making wine for 4 and a half years now. But this batch of Merlot is for anyone who like a smooth dry red and mine had a light nutty flavor! Wonderful kit!February 8, 2017Purchased

1 year agoMerlot in my dreamsThis is my first attempt at a wine kit. Everything was well described and the steps are explicit. So far the wine tastes great (before bottling) and I am looking forward to trying it with some age on it. This kit contained charred oak chips which I think improves the syrupy floor of the merlot grape juice, making it a lot more "professional" flavored.March 15, 2017Purchased

11 months agoHave my merlot in a carboy, it's only day 25, but I'm planning on keeping it there for at least six months. My plan is to transfer back and forth several times while keeping oak cubes in the infuser with it. My goal is to see just how much of an 'oaky' flavor I can get.November 11, 2017Purchased
6 months agoLeaking PackageThe first batch was very good. The last order had wine leaking inside the box. Not much had leaked out but after making the the wine it turned out a bit sour. I followed all steps to the letter, cleaning and sanitizing etc.. I think the must was somehow contaminated. The bag had a small leak around the seam where the cap is inserted.
