Sparkling sweet mead is a nice alternative to Spumante Mead, is easy to brew and definitely worth the 4 to 12 month wait. Your patience is rewarded with a beverage ranging from 10-15% in alcohol content. Two stage fermentation required. Our ingredients for this recipe include 12 pounds of Clover Honey, priming sugar, Yeast nutrient, and yeast. Makes 5 gallons of mead.

3.3 / 5.04 ReviewsHave to use the right yeastWanted to comment on Thomas's review. If you use Wyeast 4184 Sweet Mead yeast, the 12 pounds of honey in this kit is the perfect amount for a sweet mead. You can't use the White Labs sweet mead yeast or any of the dry wine yeasts because they will ferment dry or off-dry.May 5, 2017Very MisleadingThis is not a sweet mead kit by all means! Look at the dry kit, is the exact same thing. Rodney comment with Wyeast 4184 is not accurate either, Wyeast 4184 has an alcohol tolerance of 11% ABV and this amount of honey puts you around 1.087SG which is around 11.61% ABV. Wyeast 4184 can ferment this at the most semi-sweet, and it can def ferment it dry. Also the kit is advertised as 10-15% alcohol content, but there is only enough fermentable sugar to reach 11-12% and it would be dry. You would need at least 17LB of honey to have enough residual sugar to be sweet. This kit came with Red Star Pasteur Blanc yeast which has an alcohol tolerance of 13-15%. With 12LB of honey putting you around 11-12%ABV you can see how this can easily ferment dry! You any online calculator or do the math yourself and you will see.February 15, 2018Purchased

over 2 years agoNot really a sweet Mead...Was rather disappointed. This was billed as a "sweet Mead" kit, but it ended up being "semi-sweet". It's not really dry, but not sweet either. My wife likes it (since she's a fan of anything dry), but it's certainly not what I was expecting (I wanted something like Chaucer's). It's good for mulling though (if you add honey to it along with the mulling spices).November 15, 2016
