What is the best way to store any unused portion?BEST ANSWER: i don't think it would be any good to freeze it, maybe put it in a wine bottle with rubber plug and put a vacumn on it, just use it, you can add extra to your recipe wont hurt itWhat is the brix of this product?BEST ANSWER: I believe that all of the Alexander's Sun Country Concentrates have a brix of 68. I used the Muscat to make a dry sherry. It tastes good so far but will need to age for a couple more years. I have used the Burgundy, Johannesburg Resiling, Muscat, and Merlot Concentrates and all have made excellent wine.
