5.0 / 5.08 ReviewsGreat stoutThis was my first brew ever and I decided to start in all grain, I stumbled my way through the process and anxiously waited for the beer to be finished and ready to drink. I would wake up in the middle of the night to check the carboy and make sure the bubbles kept going... and waited a couple of weeks more after bottling to see what had happened. Frustrating.Eventually, at new years TA-DA! this was a great stout. My friends and family loved this(the down side is that now I only have a few bottles left. Mine had almost no cherry but that's probably because in south Florida is hard to keep a steady low temperature so I think the yeast in the bottle ate through it. Nevertheless, it was very very enjoyable(maybe too much...), had a beautiful aroma(drinking form a wine glass, like a boss) and a definite repeat for me. i'm thinking of bringing some in a thermos to work....maybe that's not such a good idea.January 3, 2012Nightcap is awesome!Not only do I love the name of this kit, but it is a great crowd pleaser! I have friends that request this brew every time they come over. The cherry extract wasn't too pronounced in the first batch I made. I was thinking of possibly using some additional frozen cherries to help bolster the flavor. It also fermented quite slow, but my basement was around 60 degrees. I definitely recommend this kit to anyone able to brew with all grain kits!November 15, 2012Mmmmm!This is a great stout with a very subtle cherry undertone. The first time I made it, I was unsure of how it would taste going into it. I was very pleasantly surprised at the outcome. Definitely one I will brew regularly.February 26, 2013Nice StoutThis was my first BIAB (Brew In a Bag) all grain. I ended up with a SG 7 points higher than the recipe called for...great efficiency. First time kegging too...I love it. Great taste, nice cherry undertone, good alcohol content...buzzing after a small glass.March 1, 2013Sweet Dreams!I brewed this during the past winter and added items I purchased from Midwest to include a small amount of chocolat extract, vanilla beens and Harvest Cherry Puree and called it Night Cap Chocolat Cherry Vanilla Stoudt. It was very bold and tasty and I gave it to friends in a 22oz bottle for the holidays. It was a great hit and very flavorable but quite expensive to make. A great sipping beer that at the end of the night lead to "Sweet Dreams"! I have one bottle left that I am aging for a special occassion.March 13, 2013night capDark beer with low ABV. Also a very subtle cherry flavor to it. Mine came in at 4% ABV and the flavor was great! Excellent dessert beer!July 11, 2013Good stout!I was a little hesitant that the cherry flavoring would be too artificial, but it is very faint and not especially overbearing. I added 10oz of Maker's Mark at bottling (the lazy man's way to add bourbon-y flavor) and the combo with the flavoring is pleasant._x000D__x000D_The stout itself is tasty, and I would order again....December 29, 2013Good stout, possibly better than Guinness.Let me start off by saying that this is a very good stout. It has very good flavor, but the cherry is no where to be found in this brew. I used the included 4 oz cherry extract during the bottling process, and also fermented with one cup of dried cherries, as many reviews say the cherry flavor is not detected. The dried cherries I feel like, only lengthened the fermentation process and over worked my yeast. This brew fermented for three weeks and has now been in the bottle for 12 weeks +. The amount of carbonation is very low for my taste (which could be my error in adding the dried cherries). Outside of low carbonation and no cherry taste, this kit will brew an excellent stout. I will definitely try this one again and not use dry cherries to see if it corrects the carbonation issue. For the price, this is a can't beat stout.March 1, 2014
