Worth the long wait
This beer will take a few months in secondary and you should try to wait some time after you bottle or keg it. As with most of these belgiums they will get better with time. I kegged mine and did not force carbonate, took about a week till fully carbonated. I have the keg in my cellar and have been sipping on this brew for two months now and every glass gets better as time goes by.

Delicious. Took a long time to get carbonated. I suspect that almost all of the yeast settled out during the long secondary fermentation.
It is a very tasty beer, very dark and a whopping 10.2% ABV.

Not your tipical Belgian Ale
told few of my drinkin' friends was making this and their response was they didn't like Belgian ale. This beer has changed their minds. The longer you let it go, the better it gets. I actually got a 10% ABV out of this one. it is a smooth drinking beer but it a slow drinking beer. Not as heavy as it looks. It's worth the wait
