I just wanted to see if I could make a good peach wine. I can't even tell you whether it is really good or not, as it is only now getting clear enough to bottle. I can tell you that it looks beautiful -- and I expect it will taste great.Can this fruit base be used to flavor cider?BEST ANSWER: If you are looking to add peach flavoring after the fermentation, I would recommend that you find a more concentrated peach flavoring. However, if you were looking to use this flavoring, I would add it before fermentation. If you chose to go this route, you will have less peach flavor than if you back sweetened with a more concentrated flavoring.Do you have to adjust PH and acidity levels?BEST ANSWER: I find all of the Vintner's Harvest Fruit base wines are great by just following their receipt. Peach will be a very mild white wine, but just right for me. If you are looking for a full body wine, add lots of fresh fruit and yes, you will have to adjust PH and acidity level. Enjoy, Chuck R
