I looked at several books on cheese making and this is the best of the lot. It doesn't sip anything and teaches you why you need to do things (meaning don't skip a step or short change yourself). It take s awhile to read through everything but I learned a lot. For each recipe I read through it a few times, planned it out, and the cheese came out well. _x000D_
Great book for new cheese makers. It covers everything and is clear. Save your self a few bad cheese episodes and read this book before making cheese.
I was fortunate to start with this book. It saved me from making lots of so-so cheese and immediately start making good if not great cheese. The books has very good recipes and as long as you follow the process, you will get good cheese.
The author really knows what she's talking about, and explains things in an organized and thorough way. I've made some of the recipes and liked all of them.
I found the book straightforward and perfect for getting up and running. All the recipes I made from the book came out well. The chedder was excellent.
