Red Star Pasteur Blanc has a neutral flavor profile that is recommended for dry wines. Recommended for Cabernet, Cider, Dry Whites, Fruits, Meads, Port, and sodas. Despite the name, this yeast SHOULD NOT be used in sparkling wines. For sparking wines, we recommend Red Star Premier Cuvée

I made a higher alcohol Mead (18 pounds because I had some left over honey). These yeast ate it all and still wanted more. I gave them some DAP when pitching and degassed in the beginning. After 6 weeks I racked to a better bottle where it's been aging for 5 months. I tasted some when I racked and have high hopes.

I've used this several times in high-gravity beers that have "stuck" at lower attenuation than I wanted. It is also good for ensuring healthy yeast prior to bottle-conditioning a big beer. Clean, neutral flavor, except for a slight sulfur bite that fades with aging.

We have used this yeast with a rhubarb wine and apple cider and the final products were fantastic. This was active in the starter within a couple of hours and was really bubbling in the cider! Will definitely buy this again.

1 - Soda making

and if you dare - you can try it in a stuck fermentation, though it will come out very dry.

Used this yeast for my first attempt at making mead and starting fermenting in a few hours. Note this will make a very dry mead so you will have to sweeten before bottling if you are looking for a sweet/semi dry mead. I prefer dry. Bought a few extra packs to keep around. Good stuff !!!

This is a great yeast to finish fermenting if you have remaining fermentables in the wort. It finds any fermentable sugars, gobbles them up and goes looking for more. If you're looking for a dryer finish, this will definitely get you there.

If all your fermentables come from extract, understand that there will be a limit to the FG that you can achieve due to unfermentable sugars. Despite the high attenuation of this yeast, it won't ferment the dextrose sugars and will still leave you with a sweet finish.
