For centuries, beer has attracted the attention of tax gatherers. Way back when, in merry old England, a tax known as a “Scot” was levied on beer sold in ale houses, but the scot only applied to those ale houses that stood in urban areas or on open, cultivated land. At the time, much of England was covered by thick forests, and it was not difficult to set up rudimentary alehouses that were beyond the reach of the taxman. With a bit of wry humor, the beer sold in these illicit ale houses became known as scot ale, and the patrons were said to drink “scot free”. Oddly enough, the word ‘scot’ is of germanic origin and has no connection with Scotland.

We present to you a Double Brown ale that you can enjoy scot free in your own illicit ale house. What is a Double Brown ale you ask? Well, it was common for some English brewers to produce more than one Brown Ale, and they usually called the Stronger one Double Brown. Pretty clever eh. Scot Free makes ample use of Maris Otter for a richly complex malt structure that is bready with an underlying toasty character that hints at dark dried fruits. The D45 candi syrup is intended to approximate the brewer’s invert sugar that was widely used in many traditional English ales. It keeps the finish dry, while accentuating the smooth malty and caramel flavors. The net result is a well balanced, deceptively drinkable strong ale with layers of flavor and an alluring ruby brown color. We highly encourage you to drink Scot Free.

There is a lot in this kit. I made it awhile back and followed recommendations on primary/2nd stage fermenting. I racked and waited 3 weeks and carbonation was fair. I think after about 1.5 months carbonation and taste improved a lot. It is good but rather pricey.
