While I have used a variety of yeasts for making mead, this is the only yeast I have used for my ales. It has been very dependable and I have never had a stalled fermentation. I did use two packs when I made I high gravity stout, just to be safe.

This yeast does nothing complex, but I don't expect it to. This is a dry yeast, and I get it because it's cheap and effective. This is one of the cleanest yeasts I've encountered, and while it won't give the fruity complexity of a liquid Scottish ale yeast, if you want a clean ferment, look no further. One packet is enough to get the job done in an average-starting gravity batch.

WARNING: You must let your beers sit and secondary/bottle-condition. When I impatiently sample my beers after only a week in the bottle, some prominent bubble gum notes are obvious (overwhelmingly so). A little time is all it takes for the yeast to clean up after itself and leave you with a clean brew.

A simple but effective strain of yeast that works for so many beers and purposes. I always have a little extra on hand, if I want to add some extra yeast to the wort, or to add a tiny bit before bottling. It's hard to go wrong with this.

This is my goto yeast for most beers, easy to use, ferments clean, easy to store.
I usually try and ferment at 60-65 degrees and clean results. Hint is to brew a lighter beer and than reuse the yeast cake for something more bold

We used this in our batch of Irish Red Ale Extract Beer Kit. The beer turned out delicious and didn't last long! Proofed in lukewarm water then added it to the wort. Bubbles were going well the next morning!

I use the Safale 04 and 05 strains for most of my beers (not lagers or belgians).
Good attenuation though it doesn't clear well. I like to ferment at 66 for the best taste.

I had this yeast on hand, and my friend needed a backup. It worked just great, had good action and fermentation, and had nearly 100% attenuation. I'll make sure to keep a spare on hand from now on, as the initial tasting seems to have a good clean finish as promised.

This is a quick and easy dry yeast that provides steady, consistent results. If you were relying on Wyeast 1056, you were spending too much money, as this less expensive alternative will work just as well for you. And with a fermentation range as generous as this (59-75 degrees), you should feel comfortable even with some slight temperature fluctuations.

Now, you could simply sprinkle it on top to pitch, but I typically follow the manufacturer's rehydrating directions to start propogation just a bit sooner.
