Made only from pilsner malt, hops, and yeast, the complexity that results from these simple ingredients is staggering: perfumey floral hops, ripe pear fruit, sour apple, spicy cloves, candied citrus and a slight biscuit character on the drying finish ... a monk's session beer.

Stan Hieronymus (author of Brew Like a Monk) and Kristen England (BJCP Continuing Education Director) bring you this very special kit. "Brouwerij'ed" on the left side of the Belgian town Malle solely for consumption by the reverent Cistercian brothers. This ale is not served or sold to the public, making it one of the rarest beers in the world. Made only from pilsner malt, hops, and yeast, the complexity that results from these simple ingredients is staggering: perfumey floral hops, ripe pear fruit, sour apple, spicy cloves, candied citrus and a slight biscuit character on the drying finish ... a monk's session beer.

Note: If you wish to achieve a level of carbonation similar to the commercial examples of this beer, add an additional 1 to 2 oz plain table sugar to the priming solution.

Simple and delicious.

This is a great beer kit. I have made it 2 other times. It does not disappoint. Simple Ingredients. I choose the Wyeast Trappist High Gravity yeast, as I did the first time. It is my favorite! The second time I chose the Omega, and it was almost as good. Since I plan on making this beer a yearly event, I may try the dry yeast once, too. HIGHLY RECOMMENDED!

Nice flavor used a liquid yeast - Did not bubble for days - I thought I ruined it
Turned out excellent - Nice gold , low ABV - Drink it after work
I keg it - taste great but can be bad - hitting the keg every night after work

Well Received Kit

I made this and bottled conditioned it to give out as Christmas & New Years presents. The two friends who worked for a Micro Brewery raved about how good the beer was, and that is saying a lot, especially as I used the extract not all grain kit. I will have to reorder this and make it again, as I'm down to a mere 6-pack after all the festivities, and folks are also telling me that they'd would like more. Not a very expensive kit either, so this is a real winner. Although some folks brew and bottle this fast, I racked the beer after two weeks and let it age two weeks, followed by bottle conditioning for another two weeks. If you check out the other reviews, this kit does benefit from a proper amount of time.

Still green but still has a good flavor

I'm not a reviewer who gives 5 stars for every beer just because it has alcohol. I picked this kit up for 2 reasons. First I love most Belgian beers, second, because it is low alcohol. My days of wanting high gravity beers are long over. I want flavor. Sometimes all I want is a low alcohol, sessionable beer that I can sit it on the porch or in the backyard with and relax, without worrying about getting drunk and hung over. Even thought mine is very green as I review it, I already get some light sweet bread flavors, touches of fruit, some tangy, and ever so slight Belgian character from BE-256 yeast. This is a simple kit, easy to brew and ferment, and is ready in a couple weeks. It's not the best Belgian I've ever had, but for what it is, the brewmasters did a pretty good job creating this recipe.
