Kombucha is a fermented sweet tea beverage that uses a SCOBY (Symbiotic Culture of Bacteria and Yeast) to convert sugars into beneficial acids. A SCOBY changes sugar into ethanol, and the ethanol into acid. Once fermented, kombucha can be consumed immediately, or bottled for a few days to add some effervescence. To create additional flavor, add fruit to your kombucha after bottling.
