Prep: 5 minutes
Cook: 15 mins
Yield: 8-10 servings

Ever hear of Pig Candy? That’s one down-home name for candied bacon. And if you’re getting ready to knock it, hold off until you try this caffeinated version that combines all the best flavors of breakfast in one delicious bite. Dare you to eat just one.

  • 12 oz thick-cut bacon, cut in half
  • ⅓ cup brown sugar
  • ½ cup finely ground coffee
  • Pinch of cayenne pepper
  • ¼ cup chopped pecans

  1. Preheat oven to 375 degrees. Mix brown sugar, coffee and cayenne (optional) together in a bowl or large zippered plastic bag. Coat each piece of bacon in this mixture, then lay pieces on a wire baking rack. Place rack atop baking sheet lined with foil for easy cleanup. Pat any remaining coffee mixture onto the bacon.
  2. Bake for 10-15 minutes, or until desired crispness. Top with chopped nuts for the last few minutes in the oven, then enjoy!

True confession: I don’t have a daily coffee habit…For me, coffee – and especially really great coffee – is made to be savored. So I always look for ways to highlight the sweet, roasty notes of coffee in my homebrew and on my table.
